San Diego Tarrazú lies in the heart of Costa Rica’s coffee country – one of the nation’s most renowned growing regions. At altitudes between 1,600 and 1,750 meters, producer Luis Carlos Picado Montero cultivates his coffee under ideal conditions where cool nights and sunny days allow the cherries to ripen slowly and develop a natural sweetness.
After harvest, the coffee is processed at Beneficio San Diego, one of Costa Rica’s most advanced mills. The beans undergo a lactic anaerobic fermentation – a carefully controlled oxygen-free process in which natural lactic acid bacteria convert the fruit’s sugars into organic acids. This creates a round, silky body with bright fruit notes and a mild, elegant acidity.
The result is a coffee of remarkable balance and complexity – soft, sweet and festive, with a gentle hint of spice that makes it perfect for the holiday season.
