We’re excited to introduce our latest addition: "San Ramón" – a truly unique coffee from Costa Rica.
This exceptional coffee hails from Piedades Sur in San Ramón, Alajuela, nestled in the lush highlands of the West Valley at an altitude of 1,600–1,750 meters. Farmer Luis Eduardo Campos, owner of Cordillera de Fuego, has dedicated 15 of his 200 hectares to growing Caturra coffee beans with great care.
Luis Eduardo is renowned for his innovative approach to coffee production. He has developed a unique anaerobic fermentation process, starting with hand-picked, perfectly ripe coffee cherries with a high sugar content of around 26 Brix. After pulping, the beans, along with their mucilage, are placed in stainless steel tanks for oxygen-free fermentation. During this process, the buildup of carbon dioxide in the tanks enhances the coffee’s complexity. Once fermentation is complete, the beans are carefully sun-dried to preserve their unique flavor profiles.
In the cup, "San Ramón" delivers an exciting flavour experience with notes of cinnamon, chocolate, cherries, red fruits, and vanilla. This complex and well-balanced profile is the result of meticulous anaerobic fermentation and Luis Eduardo’s commitment to quality. Expect a delightful fruity sweetness wrapped in layers of wine and milk chocolate, making every sip unforgettable.
Luis Eduardo has also undertaken several sustainability initiatives to reduce water usage and improve efficiency on his farm. One notable project was installing solar panels, which supply 100% of the energy for the main office and 50% of the mill’s energy needs—demonstrating a strong dedication to sustainability.
