A new rarity at our roastery – meet Finca Milán Nitro Caturra
It’s not every day a coffee makes us stop in our tracks. But when we opened the first vacuum-sealed bag from Finca Milán – a soft hiss – we knew something truly special was waiting inside.
Finca Milán Nitro Caturra is a coffee with soul. A microlot grown in the fertile, mountainous landscapes of Pereira, Risaralda, Colombia – at 1,600 to 1,800 meters above sea level. Here, third-generation coffee producer Julio César Madrid Tisnes and his team have crafted a flavour experience that brings together craftsmanship, science and innovation.
A flavour profile like no other
The fermentation method is unique: a combination of cultured and nitrogen fermentation. The coffee cherries are fermented with tropical fruits and aromatic plants, then undergo a nitrogen-rich anaerobic process – resulting in a cup that is deep, complex and beautifully balanced.
The flavour notes? Think honeydew melon, juicy watermelon, white peach, chocolate, brown sugar – and a long-lasting, round sweetness of ripe fruit. This is a coffee that stays with you long after the last sip.
Where craft meets science
The work at Finca Milán isn’t just passionate – it’s also deeply rooted in science. Their fermentation methods are being studied at the prestigious Universidad de los Andes using advanced techniques like metabolomics, metagenetics and spectrometry.
So it’s not just us who are intrigued – even researchers want to understand the magic behind this coffee.
