RARITY: "RWANDA GITOKI" (200g)

An expressive and complex coffee from eastern Rwanda with pronounced sweetness and tropical fruit notes.

This regional lot comes from Gitoki in the Gatsibo district, where smallholder farmers have specialised in coffee cultivation in collaboration with Baho Coffee. Through training and access to seedlings, the producers developed a sustainable farming approach where coffee grows alongside food crops, providing stability throughout the year.

The coffee underwent a controlled 60-hour anaerobic fermentation in sealed, oxygen-free tanks. This method enhances the coffee’s natural sweetness, creates a creamy body and highlights its vibrant fruit character. After fermentation, the cherries are carefully hand-sorted and slowly dried on raised beds until the optimal moisture level is reached.

The result is a complex and distinctive coffee where modern processing meets traditional farming knowledge.
